THE OPPORTUNITY
The Hertsmere is one of Hertfordshire’s most exciting and fast-growing golf and hospitality venues, and we are looking for an exceptional Food & Beverage Manager to help lead the next phase of that journey. This is a genuine build opportunity, not a maintenance role, for a commercially driven hospitality leader who wants full P&L ownership, a seat at the Senior Leadership Team table, and the freedom to shape something exceptional.
Our F&B operation centres on Script: Restaurant & Bar, a design-forward premium dining and events destination set within our clubhouse, with stunning views across the parkland course. Script serves a diverse and growing audience: golfers, local diners, corporate event clients, private parties, and society groups. It is a hospitality brand in its own right, and the incoming F&B Manager will be central to realising its full potential.
ABOUT THE HERTSMERE
The Hertsmere offers a premier golfing and leisure experience in south Hertfordshire, combining first-class facilities with a warm, welcoming atmosphere. Our centrepiece is an expertly designed 18-hole parkland course, complemented by a state-of-the-art 26-bay flood-lit driving range equipped with Toptracer technology, and a golf academy led by qualified PGA Professionals.
With further development plans being formalised, we are building towards being the best-in-class golf and hospitality venue in Hertfordshire and Northwest London. F&B is central to that ambition, and the incoming F&B Manager will be a key figure in making it a reality.
THE ROLE
The F&B Manager reports directly to the General Manager and holds full responsibility for all front-of-house operations, beverage performance, and restaurant management across Script: Restaurant & Bar, the players’ lounge, event hire, and society golf food and beverage. The role is a member of the Senior Leadership Team and works in close daily partnership with the Head Chef, who retains responsibility for all kitchen operations.
This is a hands-on, visible leadership role. The F&B Manager will be expected to be present and active during service, setting standards by example, coaching the team in the moment, and ensuring every guest interaction reflects the ambition of the venue. It is equally a strategic role: the F&B Manager will own the annual budget, shape the events calendar, develop the Script brand identity, and make commercial decisions that drive the operation forward.
KEY RESPONSIBILITIES
- Own and deliver the F&B P&L across all revenue streams, with full accountability for Gross Profit, labour costs, and EBITDA contribution.
- Optimise Gross Profit Margin through disciplined pricing, procurement and menu engineering in partnership with the Head Chef.
- Control and improve labour efficiency, right-sizing the team structure and scheduling to meet budget targets while maintaining service quality.
- Recruit, develop and lead a high-performing front-of-house team, raising the bar on service competency, attitude and consistency across the operation.
- Create and deliver a programme of events, themed evenings and marketing initiatives that grow the Script brand and drive revenue and footfall beyond the golf membership.
- Analyse financial performance weekly and present monthly performance updates to the General Manager, Senior Leadership Team, and board.
- Work in close partnership with our marketing agency to develop the group bookings and events pipeline.
- Ensure full compliance with all health, safety, food safety and licensing legislation.
- Manage the digital and social media presence for Script: Restaurant & Bar.
THE SUCCESSFUL CANDIDATE
We are looking for a commercially driven hospitality leader who has demonstrably grown F&B revenue in a previous role and who is energised by the prospect of taking full ownership of a growing operation. The ideal candidate will be as comfortable analysing a weekly P&L as they are on the restaurant floor during a Saturday evening service.
ESSENTIAL SKILLS AND EXPERIENCE
- Proven success as an F&B Manager or senior hospitality leader, with clear evidence of revenue growth and financial performance in a previous role.
- Strong financial acumen, fully comfortable with P&L ownership, Gross Profit management, labour cost control, budgeting and commercial reporting.
- Demonstrated track record of building and improving service teams from the ground up, not simply maintaining inherited standards.
- Experience in event-led F&B, private dining, group bookings, themed events and seasonal programming, not just static restaurant management.
- Operational fluency with modern POS systems, rota tools, stock management and scheduling.
- Full working knowledge of food safety, health and safety, and licensing legislation.
- Strong leadership presence: visible, engaging, and credible with both team members and guests.
- High competence with EPOS systems and Microsoft 365.
PREFERRED BACKGROUND
- Experience within a hospitality, golf club, leisure resort or premium dining environment.
- Degree in Hospitality Management or equivalent professional experience.
- Experience with group booking coordination and event programme management.
Candidates from hotel, leisure resort, or premium restaurant backgrounds are equally welcomed alongside those with direct golf club experience. What matters most is commercial drive, leadership credibility, and a genuine passion for building something exceptional.
SALARY AND BENEFITS
Basic salary: £45,000 per annum
- Performance bonus scheme (20% of annual salary) linked to individual and business performance targets
- 33 days holiday per annum (including bank holidays)
